Mason Jar Salads: Recipes for Salads on The Go

The best part about salad jars is that they are customizable. Each of these salad jars is packed with fresh veggies, flavorful combinations, and ample protein so that you’re satisfied and energized after lunch. Just be sure to put the dressing at the bottom and the leafy veggies towards the top so that they don’t get soggy once you’ve prepped them.

Instructions – For each salad: Add all ingredients into a 16 oz Mason Jar (or equivalent). Keep in fridge until ready to enjoy! When ready to eat, simply pour ingredients into a bowl and serve.

Greek Chicken Salad

  • 2 tbsp. balsamic dressing
  • 1 tomato, diced
  • ¼ c. diced cucumber
  • ½ c. chickpeas
  • 2 tbsp. diced red onion
  • ¾ c. diced, grilled Just BARE chicken breasts
  • ¼ c. kalamata olives
  • 2 tbsp. feta
  • 1 c. chopped romaine

Chicken Quinoa Berry Salad

  • 2 tbsp. raspberry vinaigrette (or any berry vinaigrette)
  • ¼ c. quartered strawberries
  • ½ c. cooked quinoa
  • ¼ c. blueberries
  • ¾ c. grilled Just BARE chicken breasts
  • ¼ c. goat cheese crumbles
  • ¼ avocado, diced
  • 2 tbsp. almonds
  • 1 c. arugula

Thai Peanut Chicken Quinoa Salad

  • 2 tbsp. peanut dressing (1 tbsp peanut butter + 1 tsp soy sauce + ½ tsp honey + 1/8 tsp ground ginger + ½ tsp apple cider vinegar + 2 tbsp water)
  • ¼ c. red bell pepper
  • 2 tbsp. green onion, diced
  • 1 carrot, shredded
  • ½ c. cooked quinoa
  • 2 tbsp. cilantro, diced
  • ¼ c. mango, diced
  • ¾ c. grilled Just BARE chicken breasts, diced
  • 1 c. romaine
  • 2 tbsp. chopped cashews

Southwest Chicken Salad

  • 2 tbsp. southwest ranch, avocado ranch or chipotle ranch dressing
  • 1 Roma tomato, diced
  • ¼ c. diced cucumber
  • ¼ c. corn
  • ½ c. black beans
  • ½ jalapeño, sliced (or pickled jalapeños)
  • ¾ c. diced, grilled Just BARE chicken breasts
  • ¼ avocado, sliced
  • 1 c. chopped romaine

Ingredients:

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1/2 pound asparagus (trimmed and cut into 1-inch pieces)
  • 1 cup fresh broccoli florets
  • 1 cup chopped red bell pepper
  • 1 cup chopped zucchini
  • 3/4 cup butter
  • 2 tablespoons minced garlic
  • 5 ounces prosciutto, diced
  • 2 cups sun-dried tomatoes (packed in oil)
  • 8 ounces grated parmesan cheese

Directions:

  1. Preheat oven to 375 degrees.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss pasta with olive oil.
  3. In a large skillet over medium-high heat, roast asparagus, broccoli, bell pepper, and zucchini until flecked with dark brown. Set aside.
  4. In a large skillet over medium heat, melt butter. Saute garlic with prosciutto and sun-dried tomatoes until heated through. Toss with penne, roasted vegetables, and Parmesan. Place in a 9×13 inch baking dish. Bake 30 to 40 minutes, until hot.

Ingredients:

  • 2 tablespoons raspberry vinegar
  • 2.5 tablespoons raspberry jam
  • 1/3 cup vegetable oil
  • 8 cups spinach
  • 1/2 cup chopped walnuts
  • 8 strawberries, quartered
  • 2 kiwi, peeled and sliced

Directions:

  1. Mix together raspberry vinegar, raspberry jam, and vegetable oil in a small container.
  2. Combine spinach, nuts, strawberries, and kiwi in a salad bowl. Toss with raspberry dressing.

Anova Precision Cooker

The other gadget that would make a great gift this holiday season is the Anova Precision Cooker. With this simple device and your phone, you can cook professional level meals. The Anova Precision Cooker uses what is called “Sous-vide” (pronounced ‘sue-veed’) or precision cooking, a technique that uses precise temperature control to achieve perfectly cooked, flavor-filled results.

Here’s how it works. Grab any sized pot and fill it about half way with water. Place the Anova wand into the water and use the clamp to secure it to the side of the pot. Use the controls on the wand or the Anova app on your phone to select the temperature specified in the app or recipe book to achieve your desired doneness. Take a resealable plastic bag and place your choice of ingredients and seasoning inside and seal it. Place the bag in the preheated water and clip the bag to the pot. That’s it! The water will continue to circulate eliminating any hot or cold spots, and in no time at all you will have a perfectly cooked meal! Once the ingredients are cooked, you can use a pan to crisp up the outer layer.

Doorstep Meal Prep

The thought of making a trip to the grocery store can make some people cringe, especially after a long day at work. So, why not make that stress a thing of the past by having your groceries and planned meals delivered right to your doorstep? Meal prep kits like HelloFresh, Green Chef and Blue Apron have grown substantially more popular in the last couple years with more and more options popping up all the time. So, which one do you choose? We did a comparison of three of the top doorstep meal kits to hopefully make your decision easier!


HelloFresh was our top choice with high ratings of best nutritional value with the most nutritional information, freshness of ingredients, and of course, great taste! However, if you’re looking to step out of the box and try some new flavors, HelloFresh has fewer options for those with adventurous taste buds. On the other hand, if you don’t mind the simplicity, HelloFresh’s meals, on average, had the lowest fat content, calories and sodium, making it perfect for those looking for healthy alternatives. Most of the meals take 30 minutes or less to prepare, but the more complicated recipes required additional time (about 15 minutes). HelloFresh is more on the pricey side with price per portion being about $11.50


Green Chef was our second choice with the majority of its ingredients being fresh and unblemished, its fiber and fat content being tied with HelloFresh, and its tasty flavors. Green Chef focuses on having all organic ingredients (GMO and hormone free) and a higher vegetable content than the other meal kits. Their meat products are also raised without the use of antibiotics. Green Chef also offers an expansive range of kits, which include vegetarian, carnivore, Paleo and gluten-free, making it ideal for diet and health conscious individuals. Meal prep time had a wider range of 20 to 45 minutes depending on the recipe. Green Chef is also one of the more expensive meal kits due to its all-organic ingredients coming in at about $11.99 per portion.


Blue Apron is our third choice, although it offers the most diverse recipes and the most budget friendly meal plans compared to the others. As far as taste, the dishes are fresh with good flavor and texture. The majority of foods were crisp, often organic and unblemished. The recipe cards do list calorie information, however they do not list any in-depth nutritional information as amounts may vary depending on how each meal is prepared. Meal cook time ranged anywhere from 25 minutes to 60 minutes depending on complexity. As stated above, Blue Apron is the most affordable with an average per portion price of $9.99.
